
Meet Coconut Tofu (Vietnamese Cauliflower)

Why do I love Vietnamese food? Because they take care of it with their own hands, not only are there no preservatives, but you know what makes it so unique? The recipes were created by my mother from recipes she had passed down to her generation, and it all originated during the Vietnam war in the 90’s. These dishes were meant to bring back memories for my Grandmother that would pass away within a few years after they were developed. When I was young, my mom took me grocery shopping with her when she ran out of groceries to buy me because she had nothing in stock. She would tell us stories about the local store we had just visited before. While other kids in school were getting ready to go to kindergarten and go on to daycare, my Mom still went to the same place, to the same old white lady who kept telling her “we don’t have any bananas today, we will let you pay cash”. After looking at the prices over a period of time, my Dad came up with his idea of bringing some healthy, nutritious fruits into her cart in case the lady decided to sell them for cash instead of exchanging them for goods. He then turned around and came back with two different bags of fruit, one with an apple and banana; the second bag containing pineapple and mango. My Mom had never seen anything like it and knew instantly it must be good, and so it was. She told everyone about it as soon as possible and soon enough, the whole town had come together selling these items for a profit. They weren’t even afraid of paying high-interest rates, in fact they sold anything that would bring money into their pockets. As my family grew up, Mom would take us to different stores in town to see if we wanted to try any of the new products before she bought them all for herself. We went through each section with excitement and awe to try every single item on the shelves until we got tired of them all. There was always one thing that caught my Mom’s attention, and that was the coconut milk. At first it seemed expensive, but once it was tried out with other things that tasted better, it became cheaper then ever. Over time our household was filled with different types of foods, all very tasty, but only after tasting one another did we begin to notice their distinct differences. I remember the best ones being those made with kimchi, which is the most flavorful among all Asian cuisines, and its deliciousness made it the top choice of many families. Another favorite is oysters, simply delicious. Although I personally prefer raw oysters cooked in lime juice and garlic powder with vinegar, I feel they are also great. Even though we have gotten quite used to eating it fried, the smell is still really appetizing. But when boiled they were delicious. You could even use it yourself if you wanted to. My husband loves fried tofu which he makes himself out of the frozen version. Most people believe it is too spicy but that’s not true, it’s actually pretty mild and tastes really good once you eat it. And if you want to make homemade bubble tea flavored coconut milk?
